Gujiya

Ingredients Required:
  • Flour
  • Sugar
  • Khoya
  • Cooking oil
  • Dry fruits—raisins, almonds, pistachios and cashews Water
Procedure of Rakhi gujias:-
  • Initially, ingredients like flour or 'maida' and oil are properly mixed.
  • With the help of little water, it is kneaded well to make dough.
  • It is then properly covered with wet cloth and kept aside for sometime.
  • The 'khoya' is taken in another bowl and deep-fried in oil till it is light brown. Later, it is mixed with sugar.
  • Dry fruits like raisins, almonds, pistachios and cashews are added in to this mixture.
  • Allow it to cool for sometime.
  • While the khoya cools down, little chapattis are prepared from the dough. These round chapattis are stuffed with the khoya and dry fruit mixture.
  • Now fold the chapattis so that the sides are sealed and ensure that the khoya is wrapped into it.
  • Then, on a very low flame, deep-fry these Rakhi gujias until deep brown.
  • Place on tissue paper so that it soaks excess oil and serve hot.
  • Your mouth watering and delicious Rakhi gujias are ready to be devoured!

Chiwada

Chiwada is popularly known as 'poha' in India. Indore and Ujjain are known to have chiwada in breakfast. In fact, it is 'pounded rice flakes'. It is healthy and filling too. On Raksha Bandhan, you can prepare this tasty sweet and sour food for your brother. He would love to eat this Chiwada pulao. Chiwada

Ingredients Required:
  • Chiwada or Poha
  • Carrot
  • Green Peas
  • Peanuts
  • Capsicum
  • Cauliflower
  • French beans
  • Boiled Potato
  • Ginger
  • Green chilies
  • Mustard Seed
  • Oil
  • Limejuice
  • Sugar
  • Spices
Procedure:
  • Chiwada should be washed in water and kept aside in a sieve so that excess water is drained.
  • In another pan, take a little oil and put mustard seeds into it.
  • Let the seed crackle for sometime. Add salt and turmeric to it. Also add green chilies.
  • Sauté it for sometime and add all the vegetables excluding the potatoes because it is already boiled and will get overcooked.
  • Simmer the flame and let the vegetables cook for 5-7 minutes.
  • Cover the pan. Check after sometime. If vegetables are considerably cooked, then add poha to it.
  • With this, also add potatoes, coriander powder and garam masala.
  • Mix well. Add limejuice and little sugar.
  • Garnish it with coriander leaves and serve it hot.
  • Sweet Kesar Rice

    Sweet Kesar Rice

    Ingredients Required:
    • Basmati rice
    • Strands of saffron that is crushed
    • Sugar
    • Chopped pistachios, raisins and almonds
    • Cardamom or 'ilaichi' powder
    • Piece of cinnamon
    • Pure ghee
    • Saffron color dissolved in water.
    Procedure:-
    • First, you will have to take the basmati rice and boil it in plenty of water.
    • Since this is a sweet dish, you should not add salt to the water.
    • Keep checking rice, whether it cooked or not. When it is just about to get fully cooked, remove from flame and drain water. Allow it to cool for sometime
    • To this drained rice, add sugar, saffron color, crushed saffron and cardamom.
    • Next, in a pan, heat ghee and add cloves, dry fruits and cinnamon piece to it. A little later add rice to it. Cook for a couple of minutes and turn off the flame. When the water has fully evaporated, your sweet dish is ready to be served.

    Tip: You should always serve sweet kesar rice hot and can also further garnish it with almonds, cashews and raisins.

Balushahi

Balushahi

Ingredients Required
  • Plain Maida
  • Melted and cool Ghee
  • Eating Soda
  • Oil or ghee for deep fry
  • Cardamom powder
  • Sugar Syrup
  • Sugar
  • Water
  • Drops of lemon juice
Procedure
  • Firstly, take the flour and soda, sieve it so that the even the slightest impurities are out.
  • Then, mix the mixture with ghee. Also add curd to it. Mix it properly and make stiff dough. Then cover it with damp cloth and keep aside for sometime.
  • Later, for say after an hour, make small round balls from this dough.
  • Press these balls and make a depression in the center (to give the typical Balushahi shape).
  • In a pan heat the ghee or oil and let it cool. Then pour these patties into it.
  • Deep fry it on low flame and let it turn into pink color. But make sure that you do not turn the Balushahi until it changes color.
  • Repeat the same for all Balushahi pieces. When you are done with all, drain the excess oil by placing it on tissue paper.
  • Then dip it into sugar syrup. Allow it to stand for five minutes and then remove. The delicious Balushahi is ready for the celebrations!

Ghevar

Ghevar

Ingredients Required:
  • Plain flour
  • Solidified ghee
  • Ice cubes
  • Water
  • Milk
  • Yellow food color
  • Ghee for deep-frying
Sweet syrup
  • Sugar
  • Water
For Garnishing
  • Powdered cardamom
  • Chopped almonds & pistachios
  • Saffron milk
  • Silver foil
Procedure:
  • Initially, sugar syrup has to be prepares. It should be single thread consistency.
  • For making the syrup, boil the water and add sugar.
  • Stir to avoid the burning of sugar.
  • When the water becomes sticky check the consistency with spoon.
  • In another pan, take the solidified ghee and beat it hard with eggbeater using ice cube. When the ghee turns white, add milk, flour and water.
  • Mix well so that a smooth batter is ready. To this add colored water. (in water add yellow food color ).
  • You can also add more water if the batter is thick. Actually, the batter to run easily when poured with spoon.
  • Next, in another pan, heat oil. When it is smoky hot, very slowly and carefully pour the batter in the center of the oil.
  • While pouring the batter, you must be extremely vigilant to avoid any mishap!
  • After the foam has settles, add one more glassful of batter in hole formed in center. Again, after the foam relatively settles, using an iron skewer, loosen the 'ghevar'. And place on a wire mesh.
  • Take this 'ghevar' and dip in the sugar syrup. Allow it to stand for sometime on mesh so that it rains excess syrup.
  • Let it cool and garnish it with silver foil. You can also put drops of saffron milk on it and sprinkle chopped dry fruits.

Tip: Instead of using silver foil, you can also decorate 'ghevar' with 'rabri' prepared from milk. But this 'ghevar' cannot be kept for three to four days. eady!
